It includes practical "hands on" activities such as developing an action plan for improvement to be shared with the supervisor. In addition, a four-week follow up evaluation is encouraged, where a quantitative outcome can be measured by an increase in milk sales. A "For More Information" section includes how to obtain more in-depth reference material such as Serving it Safe: a Managers Tool Kit. It is an excellent video to visualize concepts.

This material is primarily intended for school food service personnel, although any institutional food service that includes the serving of individual milk cartons can benefit from this training program. The three key points include: milk receiving, milk storage, and milk service. The video and Leader Guide ensure the target audience has a thorough knowledge of the key areas upon completion. The subject matter is relatively simple; three key points about one aspect of the food service program, but presented thoroughly. This is an excellent model for effectively teaching all key food safety topics in short sessions throughout the school year. The Leader Guide was designed to ensure the target audience understands the material presented and the key points as intended by the producer.

This is an excellent training tool for milk safety. The video and Leader Guide covers all aspects of milk safety for institutional food service workers.
